The better encoding for XML files is UTF-8.
If you're writting a text file,  the default encoding is ISO-8859-1 and it's 
not probably adapted in you case.
Amaya allows one to change the encoding, but that works if the whole document 
has been writting with this encoding or a compatible encoding.
