Exactly. You don’t. You include it and do more. 

To announce “star” may meet WCAG normative guidelines. But what does “star” mean.
Tell the user “required” and you still have met the normative but have communicated properly what that asterisk means. Not just that it is a “star”.

However, if you are also trying to show that your organization has an accessibility process in place, and is taking steps to ensure accessibility, then you don't want to stray too far from the WCAG standards.
