Extension to Schema.org related to allergies

I was thinking that a useful extension to schema.org would be related to allergies from a consumer perspective. For example, a property which encoded whether or not a product is processed or packages in facilities free from peanuts. Other consumers only care that there are no shared lines with peanuts and some just want to know that best practices are followed when it comes to cleaning the lines.

If I wanted to pursue developing such an extension to the schema.org schema, how would that happen?
