Hi Eric, Please take a look at GS1's schema.org extension at https://www.gs1.org/voc - I hope you'll find exactly what you need there (there are lots of properties with 'allergen' in them at https://www.gs1.org/voc/?show=properties for example). It's based on the terms used by the food industry, which are then expressed in line with schema.org's semantics. Where there are direct correlations with schema.org, these are expressed.
