My take on Google v. schema.org is that Google will do what they want to do. Google (usually through Matt Cutts) frequently makes pronouncements about what you should do to improve findability. please remember that Google would really rather that you gave up on trying to rank well and just bought AdSense ads. As for schema.org, note that the technology is progressing to the point where organizations smaller than Google and Bing can consume the markup and do useful things with it, so I say go ahead and use it.
