[w3c/editing] Move to Jitsi for meetings? (Issue #385)

We are currently using Google Meet, and I need to sign attendees in. Can we move to https://meet.jit.si/ or similar? One can start a meeting there and participate without creating an account. For example https://meet.jit.si/W3CEditingCall

@BoCupp-Microsoft You mentioned during today that you are not familiar with it. Could you take a look at it and see if it would work for you? Alternatively, could you make an alternative suggestion?
