JSON-LD Processing as the default interpretation of the W3C VC Data Model

I have prepared a PR that addresses the problems introduced in the JSON
Processing section:

Further, I reviewed the https://github.com/w3c/vc-data-model/pull/1270 to
see if I could repurpose any guidance from it regarding JSON-LD processing,
and I was not able to do so.

I suggest PR 1270 be closed without merging, but I would welcome the
section being added to the vc use cases or implementation guide.
