Your implied solution of "content authors should be forced to make a color-space breakpoint, creating two versions of sites: the Apple Display P3 one and the legacy sRGB one" is brittle. It assumes there are no other displays available (there are, for example a bunch of laptops which mainly aim to cover the Adobe RGB space) and assumes we won't have any other displays coming into use in the next decause (I suspect we will end up with something in-between P3 and BT.2020, to get wider gamut without the practical problems of true 2020/2100 displays). And it assumes everything can be pre-calculated, which is already not the case; there is a lot of dynamic computation of colors now and that will only increase in the future.
