I think you will love, “Web Page Design Recommendations for People with Down Syndrome Based on Users’ Experiences<https://www.mdpi.com/1424-8220/18/11/4047/htm>.” It was published in 2018. Perhaps everyone but I knows about this already.

“In this article we define the importance of website accessibility for the inclusion of people with Down syndrome. We defined the existing accessibility and web usability guidelines and analyzed the newly approved Web Content Accessibility Guidelines 2.1 guidelines.”
