Thanks for reaching out after our discussion.
I discussed your suggestion in our NFDI4Biodiversity bioschemas meeting today and my colleagues and I are eager to support your efforts.
We will be linking some examples from our project partner PANGAEA (my colleague Uwe Schindler is in Cc), specifically for variableMeasured where their practical (illegal) solution was to use subjectOf to introduce DefinedTerms.

I fully agree that it'll be great to have more DefinedTerms using (Obofoundry) Ontologies in (Bio)schemas markup.

We had the same idea about a year ago in

and chimed in into the more general SchemaOrg issue discussion at
https://github.com/schemaorg/schemaorg/issues/2734

and a bit more successfully in
https://github.com/schemaorg/schemaorg/issues/3250


If you weigh (in especially in the last one) we might get a few more DefinedTerms in. Especially if you can already showcase your "illegal"
existing examples :-)
