No, I don’t have any generic XProc documentation.

We only maintain (scarce) auto-generated documentation of our libraries, 
for ex. http://transpect.github.io/modules-docx2tex.html
And there’s a tutorial for setting up a docx→JATS→EPUB pipeline:
