Well, this behaviour isn't caused by 'xml-stylesheet' processing instructions - the problem is the amount of bytes before the the <html> tag. IE's MIME type detection takes the leading 256 bytes into account. At <http://www.edlund.org/>, it sees the XML declaration, but not the <html> tag, and concludes there's an XML document.
