mea culpa, it's a feature, not a bug ;-) 
After RTFM and correctly defining all of
encoding=" "  charset=" "  lang=" "
I find Amaya 9.2.1 correctly renders all CJK glyphs.
South asian langs not yet, but I'm still working on it...
However CJK cannot be entered using "normal" Macintosh methods.
Pasting from other apps works.

I find it does correctly render ISO-8859-2 chars 
mentioned by Jakub Holy, if pasted from another app.
but cannot input any to the page which require Alt key, except
Alt-accent, letter can be input to URL field on Macintosh too.
