Possibly because it would be rendering quite differently to a mobile device, and therefore misleading?

Mobile rendering tends to follow one of two methods (except Opera, where you can choose):

1. Reformat without layout, i.e. linearise.
2. Display as a deskptop browser, but include a zoom.

For the former, you are better off using the linearisation function. For the latter, um, your imagination, a screen magnifier or a bit of paper with a cut out? ;)
