I couldn't find any example of an attribute for overriding the incoming  
mediatype.

The header name for the value is "content-type", so some possibilities are:

   <submission resource="..." replace="instance" instance="result"  
override="application/xml" />
   <submission resource="..." replace="instance" instance="result"  
contenttype="application/xml" />
   <submission resource="..." replace="instance" instance="result"  
content="application/xml" />
   <submission resource="..." replace="instance" instance="result"  
treatas="application/xml" />

My current feeling is for contenttype.
