One caveat to consider in favor of keeping modifiers: They allow browsers to show the modified price in the payment sheet, so the user can glance over all options and make a better decision that way. Browsers can also use the different prices as a signal when sorting the payment instruments and pre-selecting the default one. See the mastercard discount in the screenshot below, for example:
