Conferences was actually one of the use cases that led to Event<http://schema.org/Event>having the subEvent and superEvent properties -- so you could have an event for the conference overall that contains other events for the individual sessions/tracks/etc. Based on the desired features you list, it sounds like the biggest missing thing is the ability to link an Event to it's related documentation (slides, papers, etc.).
