Confused about VideoObject properties

Hello,

I have a question around the VideoObject schema, as I’m confused as to
which properties to use for my scenario.

I have a video on demand marketplace (Your Fight Site VOD). My customers
can create channels, and then upload videos to their channels.

When describing a video, what property would I use to describe my platform,
and what property would I use to describe the channel that uploaded and
published the video? As I’m torn between author, producer, provider,
publisher, and sourceOrganization but not sure which property to use for
which entity.
