Schema.org does allow multiple inheritance. Checkout http://schema.org/LocalBusiness and http://bib.schema.org/Audiobook for example. 

What I think you are seeing I believe are some some teething problems with the move of a significant number of types and properties from the core vocabulary into the health-lifesci extension.
