Yeah, the cookTime / prepTime / totalTime system of properties doesn't 
seem to allow for that, does it?  I think Schema.org was not really 
meant for that level of detail in recipe markup; the properties there 
seem to lend themselves to more of a "macro" breakdown of a reciepe. 
 
A few years ago, I created a schema for just this 
purpose: http://www.formatdata.com/recipeml/spec/
 
The system it has for describing the times involved in recipes has a 
bit more flexibility:

Not sure my old tech will be helpful to you, but maybe you'll find it 
interesting.  :)
