This was the key:
toolkit.zoomManager.zoomValues

I was using cntl & mouse scrolling to zoom previously, which works, but having the button there is much better!

Whilst doing that I found this comment which provides a better way of setting a default zoom level:

That’s a really technical method though, I hope they sort out the bug and it becomes a standard preference (like in Chrome).
