Personally I like PlantUML (https://plantuml.com/). I like the fact that it works with simple text files, easy to edit, diff, etc... It also takes care of the layout for you. Granted, all these features can be pros or cons depending on your perspective ( some people prefer to point and click, and to precisely control the layout...).
