The specification says:

Non-XML mode HTML+RDFa 1.1 documents should be labeled with the Internet Media
Type "text/html" as defined in [RFC3236].
]]
However, RFC3236 defines application/xhtml+xml, and not text/html.
In any case, HTML5 now contains the definition for the media types in section
12.
I suggest referencing section 12.1 of HTML5 (and while you're at it, please
update your reference to HTML5 to point to latest version)
