I don't know how this will be represented in an SKOS format - no doubt
one of our more technical members will explain shortly - but I shall
respond using traditional thesaurus terminology with the following
example structure.

    <wines by colour>
    red wines
        Burgundy
    rose wines
    white wines
        Chardonnay
        Chablis
        Chenin Blanc
        Johannisberg Riesling
        Sauvignon Blanc

    <wines by sweetness>
    sweet wines
        Chenin Blanc
        Johannisberg Riesling
    dry wines
        Chardonnay
        Chablis
        Sauvignon Blanc

I would say that in this structure such  we have two "arrays":

red wines
rose wines
white wines

and

sweet wines
dry wines

introduced by the "node labels"  <wines by colour> and <wines by
sweetness>, each containing a "characteristic of division": colour and
sweetness respectively. These node labels are not preferred terms or
descriptors that can be used in indexing, but just ways of grouping a
list of sibling terms, so the broader term of "white wines" is "wines".
The broader term of Burgundy is "red wines", and so on.

I think that SKOS uses the expression "collection" for what is
traditionally called an "array", so I hope that this answers your
question.
