As @facelessuser says, there is currently no way to do so. What we might want to do is allow hue interpolation to be specified between stops (alongside the interpolation hint), like we're now doing with the design of the `*-interpolate()` functions. Like those functions, the interpolation method specified in the function's prelude would give the default, but it would be overridable between any particular pair.

That'd be a separate issue, tho.

Simon's comment from a few years ago suggests there's not necessarily obvious consensus, so I'd still like to get this approved by the WG.
