Re: [csswg-drafts] [css-color] Add a user-defined default for color space interpolation (#9638)

This is effectively the same as

and [as was stated in that issue](https://github.com/w3c/csswg-drafts/issues/300#issuecomment-741743420):

Also,

The default for gradients is now Oklab (it used to allow a UA choice between Oklab and sRGB, if all of the stops used legacy sRGB syntax).

As the improved gradient syntax sees wider implementation and increasing use (it is part of Interop 2023 for example) the authoring habit is likely to change to express authorial intent.
