I haven't played around with color spaces enough to have a strong intuition about which would be the better choice (since it usually depends on what you're after), but if this property is made to affect gradients as well, which default to `srgb`, then I would imagine `color-mix` defaulting to that as well would provide some sort of consistency. However, I can also see an argument against using Ye Olde sRGB "just because that's how it was in the past", which is totally fair. I would have to defer to people who have experimented with it a lot more than me.
