The bearing of the second paragraph you quoted on this isn't at all obvious to me, even now that you've called it out. I'm happy enough to take "out-of-gamut lightness is a valid intermediate state" as a resolution on your say-so, but I think the current wording of the spec would make it very difficult for most people (even those fairly familiar with color spaces) to confidently deduce that `color-mix(in lab, color(xyz-d65 1 1 1) 100%, black)` is supposed to be `lab(100.12 9.0645 5.8018)` and not `lab(100 9.0645 5.8018)`.
