AH, this is an easier question to answer.

YES, there are different theoretical bounds. XYZ (and linearized RGB and other linear tristimulus models) are models of LIGHT as light exists in the real world, and can be unbounded. (Light is an unbounded physical phenomenon.)

LAB is NOT a model of light. it is a model of PERCEPTION, and therefore bounded at least to perceptual limits.

I think that is the best way to describe the difference.
