My suggestion would be to add two keywords, `px` and `pt` to `font-optical-sizing`, so that an author can choose to scale against a particular unit consistently--or inconsistently across media by using media queries if they want--and leave `auto` to choose one or the other or switch between the two depending on the environment as it sees fit.
