What about any of these:

- `Lab(0%)` black through `Lab(100%)` white 
- `lch(0%)` black through `lch(100%)` white 
- `light(0%)` black through `light(100%)` white 
- `lightness(0%)` black through `lightness(100%)` white 
- `gray(0%)` white through `gray(200%)` black 
 - `gray(-100%)` white through `gray(100%)` black
