In general, the comments in the cookie drafts have been that proxies shouldnt be mucking with the actual content of a cookie header. I fear that your proposal would add too much complexity. Having some fields in a cookie which reflect users' state, ie address, and others which are trying to overload feature-negotiation, seems to spell trouble. If the cookie is to remain a client-server only state, then feature negotiation shouldnt be a part of it.
