I think those settings you mentioned ARE the default because that is what the not-so-computer-literate people will want: email that looks nice. I'm talking about people who think AOL is the standard. If the plain-text setting is the default then they'll think they must have the most pathetic email software in the world. However, these mailing lists are primarily accessed by very computer-literate people. For these people, changing the settings away from the defaults is a snap.
