We currently have a SessionDescription object in the API, which can convert
to/from SDP. One can certainly imagine having specific accessors on this
object so that the description can be changed without having to do
operations on a string blob.

Well, you can do this - strip anything you don't want out of the local
description, then you don't even have to negotiate it off via offer/answer.
