We work a lot with employers and could probably get real job 
descriptions to work with, with their permission.  For example, we have 
access to CVS' (pharmacy company) global job feed.

Also, I have on my hard drive NLX's decade of job descriptions, about 36 
GB of them.  NLX obtains its job postings not only by direct US employer 
feeds, but also by hand entry via US workforce agencies.  It is a good 
data set in that it is both comprehensive and much more representative 
of the actual distribution of US jobs than any other job feed source 
(most commercial job feeds, like Indeed, skew heavily to 4 year degree 
jobs).  However, to get your own access to the NLX data would require 
someone to sign an NDA and be responsible for sheltering that data from 
harm.

Another option is to partner with Chmura, a US data analysis firm that 
works with economic developers.  They have has a pretty decent job 
scraping operation, and they are very data-savvy.  They do a great job 
cleaning up most of the data they receive and they're small enough to 
work well as partners to a fledgling effort such as this.

I guess I'd suggest working with the one or two fictional examples 
first, then testing out the assumptions on one of these larger data sets.
