Question about service category

Hello

I've read about service category and  profile hierarchy, and i have
some questions:
Which is the difference between service category and profile
hierarchy? I know that profiles from hierarchy are subclasses from
profile class and have some properties for differentiate profiles,
but, why can we use this profile as service category? (I think they
are similars)
