"Jabber" row in XML protocol matrix

The information in the "Jabber" row in the XML protocol matrix [1] is
somewhat out of date. Here is updated information:

Protocol: Jabber/XMPP
link: http://www.jabber.org/protocol/ and http://www.xmpp.org/specs/

Organization: Jabber Software Foundation and IETF

Architects: [no change]

Status: [no change]

ns: many (see http://www.jabber.org/registrar/namespaces.html )

schema: as many as there are namespaces

DTD: no, we don't use those anymore ;-)

Facets: [I'd be happy to help with a review]

As a quick list I would say:

    - serialization
      - fixed
      - explicit
    - extensibility
    - some protocol

Example: [no change]
