I think there is a new point.
If I'm not mistaken some people want(ed) an Accept header because
the W3C validator did not validate XHTML 1.1 served as text/html.

But the validator now does validate XHTML 1.1 served as text/html.

So what's the point of sending application/xhtml+xml to validator.w3.org?
