At first glance, I see some server configuration differences:

lwp-request -mHEAD http://moustaki.org/resource/musicontology.rdfs |  
grep Content-Type
Content-Type: text/html; charset=iso-8859-1

(text/html???)

lwp-request -mHEAD http://motools.sourceforge.net/doc/ 
musicontology.rdfs | grep Content-Type
Content-Type: application/rdf+xml

That said, a run of the latter through iconv yields no encoding  
errors, nor does saving the document to disk and checking the RDF by  
direct input.

Wondering if anyone else on the list has any idea?
