Help with configuring Outlook 2000 to communicate with you all

A couple of people have informed me that my emails are being transmitted as
html even though I have set the format to plain text.

Three points arising from this:
1. Thanks very much to David and Jim for letting me know about the problem
2. My sincere apologies to anyone who has had difficulty reading my emails
3. A big plea for help on configuring Outlook 2000 to overcome the problem. As
I said in my opening remarks plain text is selected and I can't see any other
options that will impact on this. Is the problem in Outlook or would it be
related to the University Exchange system which I use to access my email?
