[world_famous_recipes] Stuffed Green Peppers

Stuffed Green Peppers (from Southern Living)

6 medium-sized green or red bell peppers
1 lb. lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 15-oz can Italian-style tomato sauce
1/4 t dried crushed red pepper
1/2 t salt
1/2 t pepper
1/2 c Italian breadcrumbs
1/2 c shredded Parmesan cheese

Cut off tops of peppers, reserving tops.  Remove seeds and membranes.  Cook 
peppers 4 min. in boiling salted water to cover, drain and set aside.  Remove 
stems from pepper tops and discard.  Chop pepper tops and set aside.

Cook ground beef in a large skillet over medium heat 6 min., stirring till 
beef crumbles.  Add reserved chopped bell pepper, onion, and garlic.  Saute' 4 
min. or till beef is no longer pink.  Drain.  

Stir in tomato sauce and next 3 ingredients.  Cook, stirring often, 5 minutes 
or till mixture thickens.  Spoon mixture evenly into bell pepper cups.  Place 
in aluminum foil-lined 11 x 7 baking dish.  Combine breadcrumbs and cheese, 
sprinkle over peppers.

Bake at 350 for 15 minutes or until golden brown.
