Wonderful salads from "Southern Living"


Romaine Salad with Raspberry Dressing

1 head Romaine, torn
2 small red onion, sliced
1 c feta cheese, crumbled
1/2 c toasted pecans, chopped
4 slices bacon, cooked & crumbled

Combine above ingredients.  Serve with

Raspberry Salad Dressing

1 10-oz jar seedless raspberry fruit spread or preserves
1/2 c seasoned rice wine vinegar
1/4 c olive oil

Microwave raspberry spread in a microsafe-bowl at LOW (30%) for 1 minute or 
until melted.  Whisk in vinegar and olive oil till blended.  Let cool.  Serve 
at room temperature.

Cucumber Salad with Roasted Red Bell Pepper Dressing

Combine gourmet salad greens, diced cucumber and sliced red onions.  Serve 
with

Roasted Red Pepper Dressing

1 7-oz jar roasted red bell peppers, drained
2 large cloves garlic, chopped
1 c nonfat plain yogurt
1 t salt

Pulse ingredients in blender 5-6 times till smooth.

Red Leaf Lettuce Salad with Sweet & Sour Dressing.

Combine 1 bunch red leaf lettuce, torn; 1 c frozen peas, thawed; 1 c shredded 
mozzarella cheese; 1/2 c toasted slivered almonds, and 6 bacon slices, cooked 
& crumbled.
Toss with Sweet & Sour Dressing just before serving.

Sweet &  Sour Dressing

1/3 c sugar (Splenda)
1-1/2 T vinegar
1 T diced onion
1/4 t salt
1/4 t garlic salt
1/8 t pepper
1/2 c vegetable oil

Pulse first 6 ingredients in blender 2-3 times, till smooth.  With blender 
running, pour oil through food chute in a slow, steady stream; process till 
smooth.

Fruit Salad with Honey-Pecan Dressing

Arrange fresh orange and grapefruit sections, sliced avocado and sliced 
strawberries over Bibb lettuce leaves.  Drizzle with Honey-Pecan Dressing.

Honey-Pecan Dressing

3 T sugar
1 T chopped sweet onion
1/2 t dry mustard
1/4 t salt
1/2 c honey
1/4 c red wine vinegar
1 c vegetable oil
1 c chopped pecans, toasted

Pulse first 6 ingredients in blender 2-3 times till blended.  With blender 
running, pour oil through food chute in slow, steady stream.  Process till 
smooth.  Stir in pecans.
