Examples in XML Signature draft

Since we are recommending that C14N 1.1 be used instead of C14N 1.0, I
think we should probably update the examples in section 2 to use C14N
1.1, and also add an explicit C14N 1.1 reference Transform to the
examples in section 2.2 and 2.3.
