Is then "iataCode" the best (only) property as the identifier for airports? (some airports have both IATA and ICAO codes)

Probably not...could be "airportCode" and allow the value (ie a URI etc) to indicate the vocabulary it comes from.

BTW, the schema.org definition of iataCode is "IATA identifier for an airline or airport"...does it also apply to airlines?
