I spoke too soon. In fact Dreamweaver supports the insertion of the 'profile' attribute and its value when the user uses dialogs to insert/edit the head tag and when code hinting. See

While Dreamweaver doesn't directly support microformats, there are 3rd party extensions that insert markup chunks with microformat classes already in place.
